Under a new owner, Carlyle’s diners rave about the updated menu, including new dishes inspired by the restaurant’s famous chef, James Beard. Carlyle is an American classic. The storied restaurant on Virginia’s Eastern Shore has been a local favorite for more than five decades. But under new ownership, it just got better. 

In 2017, Carlyle was purchased by restaurant-loving history buffs, who got to work restoring the 140-year-old building. They removed wallpaper in the iconic library wing, installed new floors, and restored the wood-paneled dining room. 

But Carlyle still has a lingering connection to the past. Beard, the restaurant’s famed chef, created dishes here that influenced American eating habits until his death in 2004. So the new Carlyle dishes use heirloom ingredients, like heirloom tomatoes, that Beard cultivated decades ago.
